Brix (°Bx) is used to measure the amount of dissolved sugar content in liquid. Therefore, the higher the Brix content in a cup of coffee, the sweeter it is.

Here at Brix Coffee, we strive only to bring in coffee beans with high Brix, which can only come from the ripest and sweetest coffee beans.

Specialty coffee beans typically have 20 - 25 °Bx in readings, while our selection of beans offers a reading of 25 - 29 °Bx.

Processing Methods

Brix Coffee uses natural and washed processing methods to bring out the best flavors from our beans.

What is Natural Processing?
Coffee cherries are first selectively hand-picked when they are fully ripe, resulting in higher-quality beans.

The whole cherries are then spread out in thin layers on large drying beds in the sun, and are left to dry for several weeks. During this time, the cherries lose moisture and the pulp becomes dry and brittle.

This gives naturally processed coffee beans its unique flavor profile, as the beans have prolonged contact with the fruity pulp during drying, which helps to impart fruity and fermented notes to the coffee.

Workers regularly turn and rake the drying coffee cherries to ensure even drying and to prevent mold or fermentation.

Once the cherries have dried to the desired moisture content, the outer pulp becomes easy to remove. This can be done by machine or by hand.

After parchment removal, the coffee beans are hulled to remove the remaining layers of husk and parchment, revealing the green coffee beans inside.

This gives naturally processed coffee beans its unique flavor profile, as the beans have prolonged contact with the fruity pulp during drying, which helps to impart fruity and fermented notes to the coffee.
What is Washed Processing?
Washed processing, or wet processing, is known for producing clean, bright, and acidic coffees, with clarity of flavor, and a clean profile. It allows the inherent flavors of the coffee bean to shine through, making it a preferred method for high-quality specialty coffees.

Coffee cherries are first selectively picked when they are fully ripe, resulting in higher-quality beans. The harvested cherries are then mechanically or manually depulped to remove the outer skin or pulp.

The depulped beans, still coated in mucilage, undergo fermentation in water tanks. This fermentation process helps to break down and loosen the mucilage layer from the beans.

After fermentation, the beans are thoroughly washed in large amounts of water to remove the loosened mucilage.

The washed beans are then spread out in thin layers on drying beds to dry. This process needs to be done carefully to reach the optimal moisture content for storage and shipping.

Finally, once the beans are dried, they undergo milling to remove the parchment layer, which is the dried husk that surrounds the bean, revealing the final green coffee beans.
What is Honey Processing?
In contrast to the washed process, in the natural process, the whole cherries are dried intact, allowing the beans to ferment inside the fruit. Once dried, the cherries are hulled to remove the beans, resulting in a coffee with a fruitier, sometimes wine-like flavor profile.
What is Pulped Natural Processing?
Similar to the honey process, in pulped natural processing, the outer skin is removed, but some mucilage is left on the beans during drying. However, the amount of mucilage left is typically less than in honey processing.
What is Maceration Processing?
This relatively new method involves fermenting coffee cherries in sealed tanks before drying. This controlled fermentation process can impart unique flavor characteristics to the beans.

We are committed to sustainability. This certification means that our coffee beans are produced using methods that support the three pillars of sustainability: social, economic, and environmental.

In addition, although it incurs a higher labor cost and takes more time, all of our coffee is shade-grown (not sun-grown).

What are the benefits of shade-grown coffee?
Shade-grown coffee is typically cultivated under a canopy of trees or other vegetation. This provides a more natural habitat for various plants and animals, promoting biodiversity and protecting ecosystems.

Many coffee enthusiasts also believe that shade-grown coffee tends to have better flavor profiles because the slower ripening of coffee cherries in the shade can lead to more complex and nuanced flavors.

On top of that, the shade can create a habitat for natural predators of coffee pests, reducing the need for pesticides on your coffee beans.

Plus, the leaf litter and organic matter from the shade trees enhances soil fertility and moisture retention, while shade trees absorb and store carbon dioxide gases produced.

All these factors contribute to increased environmental sustainability, as compared to sun-grown coffee beans.
Low Carbon Footprint Emission
We import our beans from Indonesia. This results in the lowest carbon footprint emission (up to 16x lesser) compared to our usual sources of specialty coffee beans, without sacrificing any of the quality.

*Carbon footprint numbers are calculated based on the distance between the source country and Singapore where we're based. This represents how much carbon gases are emitted to ship the coffee beans to Singapore.

Can you grind my beans for me?

Yes, definitely! Simply select your preferred grind size on the product page.

However, do note that if we do so, the beans will have a shorter shelf life (around two weeks or so).

For the best tasting experience, we would highly recommend getting a personal coffee grinder to grind your beans just before pulling your shot, or making your coffee.

How long will shipping take?

We ship all local orders within Singapore via Next Day Shipping. This means that you'll receive your order on the very next business day.
